Course Contents : Fortification of milk by minerals and vitamins; recombined milk products; equipments and processing technologies for recombined milk products; types and production of imitation, types, composition and formulation of infant milks; recovery methods and functional properties of milk protein products (casein, caseinate, co-precipitate, whey protein concentrate); dairy desserts.
